Roasted Asparagus

I am finally catching on to the roasted vegetable train. Slowly, but it’s starting. This summer we are trying to not use our AC as much which means trying not to cook to much with the stove/oven. So I have been doing tons of slow cooker stuff, or oven stuff that doesn’t take more than 20 minutes or so.  It was been a fun challenge and my house only gets to about 77* by the end of dinner which in my book is a huge accomplishment!!

I was completely surprised at how much my kids loved this recipe. Sweet Pea at 8 spears like candy!! It also helps that avocado oil is simply amazing!! But this recipe seriously tastes like its drenched in butter even though it’s not. So the taste of butter without the calories or the stomach ache. Lots of pluses in my book!!

Avocado Oil (or EVOO)
Seasoning Salt

Preheat oven to 400*F and line baking sheet with parchment paper.
Snap off the ends of the asparagus and place in a large bowl.
Drizzle with oil and season with seasoning salt.
Toss to evenly coat.
Place in a single layer on baking sheet.
Bake in oven for about 20 minutes or until tender.
