Slow Cooker Balsamic Chicken

Whole doesn’t love when they can use their slow cooker? It is seriously my favorite thing. It makes ‘the witching hour’ so much smoother and it allows me to relax in the evening and spend time with my kids.

Throw the chicken in first thing and let it cook on low or throw it in during lunch time and forget about it. Enjoy the whole day or the afternoon with your kids and keep your house cool during the summer.

This chicken had so much flavor and the juices that were in the slow cooker after cooking were delicious to add on top of the chicken for more flavor or rice as a side dish. Add whatever veggies or a simple salad and you have yourself a perfect and easy dinner! The sister missionaries loved it! 😉

1 tsp Garlic Powder
1 tsp Dried Basil
1/2 tsp Salt
1/2 tsp Pepper
2 tsp Dried Minced Onion
4 Garlic Cloves, minced
1 tbsp EVOO
1/2 cup Balsamic Vinegar
8 boneless, skinless Chicken Breasts
Sprinkle of Fresh Parsley, chopped, optional

Combine the first five drive spices in a small bowl.
Clean the chicken breasts and then rub the spices over each breast, set aside.
Pour olive oil and garlic on the bottom of the slow cooker.
Place chicken on top.
Pour the balsamic vinegar over the chicken.
Cover and cook on HIGH for 4-5 hours.
Sprinkle with fresh parsley and serve warm.
