Chicken Salad

I have always loved this salad but have always been leery about it at the same time because people put nuts in it. It wasn’t until recently that I found out that I’m not allergic to almonds — which is a huge relief since everything Whole30 or Paleo has almond in it. Regardless, I still make my salad sans nuts and just enjoy the refreshing crunch and flavor from the grapes and celery.

Feel free to add whatever you want to this salad. I have seen recipes with dried cranberries, dried cherries, craisins, and all kinds of nuts. Just remember that you might need to add a little more mayo depending on how much you add.

2 Chicken Breasts, boneless, skinless, cooked and shredded
Gapes, quartered, your desired amount
Celery, sliced, your desired amount
Mayo, to your desired consistency
S&P, to taste
Onion Powder, to taste
Garlic Powder, to taste

In a large bowl, combine the chicken, grapes, celery, mayo, and seasonings.
Serve immediately or store in fridge in air tight container until ready to serve.

Note: I used my Slow Cooker Rotisserie Chicken recipe for this and did not have to add any seasonings at all. It was perfect and oh so flavorful!
