When The Hubs goes out of town we usually just order pizza or make grilled cheese. Something fun and easy. But being on Whole30 takes both of those out the question for me. So I searched Pinterest looking for something easy and last minute to cook for one. I was very intrigued when I found this recipe and had to give it a try.
This by no means tastes like pizza. So don’t go into this thinking that is what you are going to get. But it still tastes amazing!! In fact, I may just make it again real quick!
2 Russet Potatoes
6-8 tbsp Pizza Sauce
8 slices of Pepperoni, quartered
Black Olives, sliced
Other favorite Toppings
Preheat the over to 400*F and line a baking sheet with parchment paper.
Wash and poke holes in the potatoes, brush with EVVO or clarified butter and bake for 40 minutes or until tender.
(OR bake in the microwave)
Let cool for about 5-10 minutes, then cut them in half and use a cookie scoop to scoop out most of the inside.
Brush both sides of the potato skin with oil or butter again and bake face down on the baking sheet for 7 minutes.
Turn ove rand bake again for 5 minutes.
Fill with sauce and other favorite toppings.
Bake for about 10 minutes or until pepperoni is crispy.
Serve Hot and Enjoy!
