Tomato Sauce

This Whole30 compliant Tomato Sauce was delicious. Sooooo much flavor to it. My taste buds were doing a dance. It’s pretty easy to make and the kids loved it. No complaints form Little Man, and the next day Sweet Pea was eating the sauce by the spoonful!! I was so happy she was eating veggies!!! So I would have to say this is kid approved!

I would like to also say, please don’t be afraid of any recipe that is labeled Whole30. Any of the recipes that I’m posting that are Whole30 compliant aren’t complicated. And just because it’s compliant with a ‘diet’ or differently meal plan from what you are doing… don’t dismiss it. There is soooooo much flavor and you will be surprised! Just like we are! So give them a chance. Maybe you’re kids will enjoy eating healthier without you having to beg them too! 😉

1 tbsp Cooking Fat*
1 Onion, finely chopped
2 Celery Stalks, finely chopped
1 Carrot, finely chopped
2 cloves Garlic, minced
1 can (28oz) Crushed Tomatoes
1 tsp Thyme
1 tsp Oregano
1 Bay Leaf
1 tsp Salt
1 tsp Pepper

Heave the cooking fat in a large pot over medium heat.
When the fat is hot, add the onion, celery, and carrot and cook stirring until the onion becomes translucent, about 2-3 minutes.
Add the garlic and stir until aromatic, about 1 minute.
Add the tomatoes, thyme, oregano, bay leaf, salt, and pepper.
Reduce the heat to a simmer, cover and cook on low, stirring every 20 minutes or until the sauce is think and smooth, about 1 hr.
Discard the bay leaf.
(Store in the fridge for 5-7 days or free for 3-4 months)

*Cooking fat means clarified butter, EVOO, coconut oil etc that is Whole30 compliant. But you could use cooking spray, canola oil, or regular butter.)
