Cowboy Cookies

I made this cookies for the youth I teach at church and they looooooved  them. One of the young men even at like 10 cookies. He couldn’t stop and kept saying, “Man these are so good!” Totally made my day!

I was completely surprised that there was no butter used in these cookies. They do taste amazing. I like them. But they don’t seems as creamy as my Oatmeal Cookies. So I’m still on the fence and may have to make them again. But regardless, they are still amazing!

1 cup Shortening
1 cup packed Brown Sugar
1 cup Sugar
2 Eggs
1 tsp Vanilla
2 cups Flour
1 tsp Baking Soda
1/2 tso Baking Powder
1/2 tsp Salt
2 cups Oats
1 cup Nuts (optional)
1 cup Chocolate Chips

Preheat oven to 350*F.
Cream the shortening, brown sugar, and sugar until smooth.
Add eggs and vanilla.
Mix well.
Sift flour, baking soda, baking powder, and salt together.
Mix into batter.
Stir in oats, nuts, and chocolate chips.
Spoon onto a cookie sheet, placing about 2 inches apart.
Bake for about 10-12 minutes.
Makes about 3-4 dozen.
