Homemade Banana Pudding

We love pudding around here. The Hubs used to make pudding every Sunday night to eat for lunches during the week. Then things got tighter and pudding wasn’t a necessity and so we haven’t bought it in a long time. So, the best way to make the favorites is learn how to make them by scratch. 9 times out of 10 you should have all the ingredients on hand when making something from scratch. So when I found this recipe, I was super excited to learn how to make it. The only thing I didn’t have was a double boiler. So, if you don’t have one, borrow one first. I haven’t found many recipes that require one so I borrowed my mom’s.

This dessert was fantastic and we enjoyed it for one of our date nights. And it’s still good as a left over! 😉

2 Egg Yolks, beaten
2 cups Milk
Vanilla Extract to taste (1 1/2-2 tsp)
1 cup Sugar
2-3 tbsp Flour
1 bag of Vanilla Wafers
2 ripe Bananas, sliced thin
Frozen Whipped Topping, thawed

In a double boiler, mix eggs, milk, and vanilla extract.
Combine sugar and flour and add to wet mixture.
Cook until thickened.
Line a casserole dish with vanilla wafers and make the following layers: banana, pudding mixture, vanilla wafers, bananas, pudding mixture, whipped topping.
Refrigerate at least 4 hours.
