I love Noodles Express! But sometimes fast food doesn’t sit with me well. I am so excited that I found this recipe so I can save money and make this delicious dish at home! I just need to remember to double or triple the sauce recipe. The sauce was so delicious, it just wasn’t enough. And the best thing is, you can change up the vegetables to your liking. I’m not usually a fan of broccoli but I wasn’t thinking other than following the recipe. Maybe what I need to do is find a copy-cat recipe of the veggie slaw from Noodles Express.
1 lb Chicken Breast, bite sized pieces
1/4 cup packed Brown Sugar
1/4 cup Soy Sauce
2 tbsp Apple Cider Vinegar
1/2 tsp ground Ginger
2 cloves Garlic, minced
1 tbsp Cornstarch
Cook rice according to packaged instructions.
Season the chicken pieces with S&P and place in a large nonstick skillet.
Cook until done, stirring often.
In a small bowl or measuring cup, combine the brown sugar, soy sauce, ginger, garlic, vinegar, and cornstarch.
Whisk together until there are no cornstarch lumps.
Add sauce to chicken and cook stirring constantly until it thickens into shiny glaze.
Remove from heat and serve immediately with rice and steam broccoli.
