Breakfast Taquitos

There are days that I swear I could live off of just breakfast. I love that there are so many different ways to enjoy breakfast foods. You can have everything individually, or you can combine things to create an amazing dish. As long as you have the staples — egg, bacon, sausage, cheese, tortillas, english muffins, toast — you can make just about any fun and amazing combos for breakfast. Like… Breakfast Burritos, Egg, Bacon, Cheese Quesadillas, Breakfast Sandwiches, and now Breakfast Taquitos!! They are simple and amazingly delicious!!

This recipe is also customizable to fit your family or the crowd you’re feeding. We used larger shells and so I put 1 1/2 links in each tortilla. Customize it and make it your own!! 🙂

1 pkg Sausage
6-8 Eggs
1 1/2 cups Shredded Cheese, of your choice
10, or so 6 inch Tortillas

Preheat oven to 425*
Cook the frozen sauces in a skillet on medium-high heat.
Make scrambled eggs.
Warm tortillas for about 10 seconds.
Assemble starting with egg, cheese, sausage, and then roll taquito style.
Place on parchment paper lined cooke sheet.
Spray the taquitos with cooking spray and back for about 10-15 minutes or until golden brown.
Serve with salsa for dipping.
