I love me some Garlic Red Skin Mashed Potatoes!! Especially the ones you can get at Famous Dave’s. So I decided to give these babies a try and I loved it. I have made mashed potatoes in the slow cooker once before, so I was excited to try it out again.
This is totally something that can help you out when you have large dinner parties or for Thanksgiving. It will clear up the stove top and you have one dish. Simplicity is the key right? I hope you like these as much as I did.
4 lbs Red Potatoes, cleaned, cut into 1″ pieces
1/2 cup Water
1 tsp Salt, or to taste
1 tsp Pepper, or to taste
1 1/2 tbsp Minced Garlic (4 cloves)
1/4 cup Butter, melted
2/3 cup Sour Cream
1/2 cup Milk, warmed
Additional butter for serving.
Spray 6-7 qt slow cooker with nonstick spray.
Place potatoes in slow cooker and pour water evenly over the top.
Toss with S&P then add garlic and pour butter evenly over potatoes and garlic.
Cover and cook on HIGH for 4 hours or until tender (do not drain).
Mash potatoes with a hand masher, add sour cream.
Whip with an electric hand mixer until desired texture.
Add milk and keep mixing until desired consistency.
Serve warm with more butter and S&P as desired.
