English Muffin Egg Pizzas

This might not seem like it would taste good at first but you seriously ‘can’t judge a book by it’s cover’. Or in this case, ‘a meal by it’s name’.

When The Hubs first presented this ‘bringer’ option to me years ago I thought he was nuts. He simply said trust me and, well, the rest is history. Give it a try! I promise that you won’t be disappointed!

Ingredients
English Muffins
Hard Boiled Eggs
Tomato
Olive Oil
Oregano
Mozzarella Cheese
(The measurements depend on how many you’re feeding.)

Directions
Boil eggs for about 7-10 minutes to get hard boiled eggs.
When the eggs are done, rinse with cold water to stop the cooking process.
Peel the eggs shells off and slice using an egg slicer.
Slice tomatoes into thin slices.
Toast english muffins then place on a baking sheet.
Drizzle or brush olive oil over each english muffin.
Place tomato slice on each english muffin, then arrange egg slices on top.
Next top with a little mozzarella cheese and a few dashes of oregano.
Place under broiler until cheese is melted.
Enjoy!

Note: The measurements on the ingredients depends on how many people you are feeding. For the two of us, we like to have 3 ‘pizzas’ each so that’s 3 english muffins. Then I boil about 4-6 eggs because we like to have slices with the yolk in it and we typically discard the slices with no yolk. That can make serving a larger crowd a bit complicated so if you’re not picky about having yoke in your slices then you do about 1 egg for ever 2-3 pizzas. Just depends on how much egg you want! So get creative and have fun!!!
