The other day for dinner, I went into my refrigerator to get out a some asparagus and it had gone bad. I only had it in the fridge for 3 days and it had already gone bad. I was so frustrated and started scrambling to think of what vegetable we could have for dinner. Then I found a few carrots and jumped on Pinterest. (Serious, Pinterest is a major life savor sometimes.) I scrolled through carrot recipes and found one that looked pretty easy and made it even easier!

Carrots, baby or long
Preheat oven to 400*
Line baking sheet with foil.
If you have long carrots, cut them down to the size of baby carrots and cut in half.
Place in a bowl and drizzle with olive oil and several dashes of ranch seasoning.
Mix together to combine and make sure evenly coated.
Place carrots on baking sheet.
Bake for 18-20 minutes.
