Salsa Chicken

This is one of the best lazy-day-go-to recipes. There are two ways that you can make it. Crockpot and stove top. I guess it just depends how on the ball you are that day! ūüėČ

I have been eating this dinner for 10 years! Most people have chicken, rice, and salsa on hand at all times and its easy to double or trip for a crowd. So enjoy and tell me which way you like to make it!

Ingredients
2 Chicken Breast
1-2 jar Salsa
2 cups Cooked Rice
1 tbsp Oil (for stove top)
*Although measurements really depend on how you.*

Directions
Stove Top
Thaw, clean, cube chicken.
Start cooking the rice.
Cook chicken in oil until cooked through.
Pour jar of salsa in the pan and let simmer for 10-15 minutes.
Serve rice and chicken side by side or chicken on top of rice.

Crockpot
Thaw and clean chicken and place in the bottom of your crockpot.
Pour in about 2 cups of salsa.
Cook on HIGH for 2 hours.
Start making rice with about 10 minutes left on the crockpot.
After the 2 hours, remove chicken and cube or shred.
Return chicken to crockpot until rice is finished, add in a little more salsa.
Serve rice and chicken side by side or chicken on top of rice.

ENJOY!
