Berry Crepes

So we made Mixed Berry Cream Cheese Crepes and I absolutely loved them!! The Hubs wasn’t a fan of it. He thought the cream cheese part made it too sweet. Maybe he didn’t use enough of the mixed berry sauce?! I don’t know. But he loves these Berry Crepes better. To each his own right? Try them both and let us know which one you like better!

Ingredients
Strawberries or any Berry
1 cup Sour Cream
1/2 cup Powdered Sugar
1 carton Orange Creme Yogurt
1 tbsp Lime Juice
1/2 tsp Vanilla Extract
1/8 tsp Salt
Crepes

Crepes
1 cup Flour
1 cup Milk
3 Eggs

Directions
In a medium bowl, cut and prepare your fruit.
In another medium bowl, mix together sour cream, sugar, yogurt, lime juice, vanilla and salt.
In another medium bowl, mix together flour, milk and eggs.
Warm a 10″ skillet on the stove and spray with nonstick spray.
Pour about 1/3 cup of the flour/milk/egg mixture in the pan and tilt the pan to cover the bottom.
Flip when bubbles form and pop like pancakes.
To assemble…
Lay crepe on a plate.
Spoon some yogurt mixture all over the crepe.
Spoon some berries on the crepe.
Roll like a taco.
Add some more yogurt mixture and berries to the top
OR
Once yogurt mixture and berries are on crepe….
Fold in 1/2 then 1/2 again to make a layered triangle.
Top with more yogurt mixture and berries!
