Lion House Dough/Rolls

I have a few recipes coming up that use this basic roll recipe. It’s an easy roll recipe and it’s freeze-able!! You can use this recipe for cinnamon rolls, pizza, petal roll, scones, fry bread… Just about anything. So try it out and enjoy!!

2 tbsp Yeast
2 cups warm Water
1/3 cup Sugar
1/3 cup Shortening
2 1/2 tsp Salt
2/3 cup Non-Fat Dry Milk
5-6 cups Flour
1 Egg

In a small bowl combine warm water and yeast and let sit for about 5 minutes.
In a mixing bowl combine sugar, shortening, salt, milk, 2 cups of flour, egg, and water/yeast mixture.
Beat together until smooth.
Add 1/2 of flour at a time until well-mixed.
Knead dough until satiny.
Let rise for 1 hour or until about three times the size.
Shape and let rise for another hour.
Cook for 400* for 8-12 minutes.

To Freeze
After shaped place on parchment paper on a cookie sheet and place in freezer for 30 min to an hour.
Transfer to freezer bag or container.

To Thaw
Take out the desired amount of dough and let sit for about an hour.
Let rise for about an hour or until doubled in size.
**To add warmth for the second rise, I boil water in the microwave and stick it next to the rising dough with a towel over it to help keep in the heat.

**Cooking times vary. Original recipe says 10-15 minutes, but 15 minutes gave mine a dark golden brown crust. You want a super light brown crust so I’d start with 8 and go from there.
