I think I had more fun putting the crepe together and taking pictures of!! Or maybe I had more fun eat every single bite and savoring it!! Either way this breakfast is a feast for both the eyes and the stomach!!
We made a these Berry Crepes a few years ago and they were delicious. Very sweet. These mixed berry crepes, in my opinion, are soooooooo much better!! However if you ask The Hubs he thinks our berry crepes takes better. I think it depends on your palate. Example, milk chocolate is too sweet for me and hurts my teeth now. Dark chocolate is more my speed with the sweet and bitter. The berry crepes are very sweet, like milk chocolate. These crepes are still sweet, but sweet and bitter the way like dark chocolate. Does that make any sense? Maybe you should make both recipes and let me know your opinion!! In the mean time I’m just going to keep drooling over these pictures!
1 cup Flour
1 cup Milk
1 cup fresh or frozen Raspberries
1 cup fresh or frozen Blueberries
1 cup fresh or frozen sliced Strawberries
1/2 cup Sugar
1/2 cup Water
1/4 tsp Ground Cinnamon
4oz Cream Cheese, softened
4 tbsp sugar
2 tbsp Lemon Juice
Place all sauce ingredients in a medium saucepan and bring to a boil over medium-high heat.
Once boiling, reduce to low and let simmer, stir occasionally until sauce reduces and is slightly thickened, then remove from head and set aside.
While the sauce is simmer, place cream cheese and sugar in a medium bowl and blend with a mixed (hand or stand) until creamed.
Add lemon juice and continue beating until filling is smooth and creamy, then set aside.
Lightly grease a non-stick skillet over medium-high heat and poor 1/4 cup of batter on the cook.
Cook like a pancake then transfer to another plate and keep warm, continue with rest of batter.
Spread the cream cheese filling over a crepe, fold in quarters and pour some warm berry sauce on top!
