I am seriously a Mexican food L O V E R!!! I have been my whole life. I could Mexican food almost every day of the week! So when I saw a video clip on Facebook on how to make Chimichanga’s I had to try it because it looked ‘clean’ and pretty healthy!! It was A M A Z I N G and perfect as left overs too! This will for sure be a keeper!
2 cups cooked Chicken, shredded
1 cup Salsa
1/4 cup Green Onions*
1 tsp Cumin
1/2 tsp Oregano
1 cup Cheddar Cheese, shredded
Thaw, cook, and shred your chicken.
Mix chicken, salsa, green onions, cumin, oregano, and cheese together in a bowl.
Scoop chicken mixture onto tortilla shells and fold burrito style.
Place in a greased 9×13 pan.
Bake in 350* oven for 15 min, flip the chimichangas and bake additional 15 min.
Serve atop a mound of lettuce.
Top with sour cream, guacamole, and more salsa!
