We have made this recipe twice now!! I love it! The first time we made it, we did the exact recipe below. We didn’t fee like the chicken had enough flavor so the second time I made it, I doubled the ‘dressing’ and let the chicken marinate for about an hour! However, don’t double the lemon… Maybe halve it. It was very lemony.
This is a recipe I will be keeping in my collection for sure!!!
1.5-2 lbs Chicken Breast
2.5 cups fresh Green Beans, trimmed
1.25 lbs diced Red Potatoes (about 4 cups)
1/3 cup Olive Oil*
1 tsp dried Oregano*
1 tsp Salt*
1/4 tsp Pepper*
1/4 tsp Onion Powder*
2 Garlic cloves, minced*
1/3 cup FRESH Lemon Juice*
Start by cleaning the chicken and then place it in the center of the crock pot.
Add the green beans on one side then carefully stack the potatoes on the other side.
In a medium sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder and garlic cloves.
Pour this mixture evenly over the chicken, green beans and potatoes.
Cover and cook on HIGH for 4 hours WITHOUT opening the lid during the cooking time.
