Taco Stuffed Peppers

I have heard amazing reviews of how great stuffed peppers are. I have never really been a fan of peppers unless they are in salsa. But I thought we’d give it a try and see what happens.

I am personally not a fan of the pepper part (bwahaha… that’s the whole point of this meal right?) BUT the ‘stuffing’ is amazing. It gives you a burrito feel and is great either by itself or in a tortilla!

Ingredients
6-8 medium/large Bell Peppers
1 lb Ground Beef
1 medium Yellow Onion, diced
1 can Black Beans, drained
1 cup cooked Rice
1 cup Corn
1 jar Medium Chunky Salsa
1 packet Taco Seasoning
1 1/2-2 cups grated Cheddar/Mexican Blend Cheese
Optional: Guacamole & Sour Cream to finish

Directions
Preheat the oven to 350*
Cut the tops off the peppers and remove the seeds.
Place in a baking dish and bake for about 20 minutes.
While peppers are roast, heat oil in a skillet over medium/high heat and brown ground beef.
Add taco seasoning and mixture.
Add diced onion and cook till tender then reduce to medium heat.
Mix in black beans, rice, corn, and salsa.
Add 1 cup of cheese and stir all together till the cheese is melted.
Remove from heat.
Remove peppers from oven and stuff with the taco mixture.
Top with additional cheese and place back in the oven for 15 min or until cheese is melted.
Then top with guacamole and sour cream.
