Healthy Chicken Nuggets

Last week I posted about about Homemade Baked French Fries. Have you had a chance to try them yet?

This week I have another fast food fix for you! How about some Homemade Baked Chicken Nuggets?? Again Little Man prefers these over fast food nuggets and they taste amazing!!

Ingredients
16oz (2 large) Skinless Boneless Chicken Breasts, cut into bit sized pieces
Salt & Pepper to taste
2 tsp Olive Oil
8 tbsp Italian Seasoned Breadcrumbs
4 tbsp Panko
3 tbsp grated Parmesan cheese

Directions
Preheat oven to 425*
Spray baking sheet with oil (not necessary if using stoneware).
In a bowl, evenly coat chicken with olive oil and salt and paper.
In a gallon sized bag, mix together the breadcrumbs, panko and parmesan cheese.
Add the chicken to the breadcrumb mixture bag and shake around to coat evenly.
Remove the chicken from the bag and place on baking sheet.
Bake for about 8 minutes and turn the chicken and bake again for another 3 minutes or until cooked through.
